Canning Tomatoes: Preserve the Taste of Summer
I’m not from a big gardening family, but I do recall very tall wooden stakes and shreds of white sheets holding together the prolific tomato plants my mom planted in our backyard.
She seemed able to use all the tomatoes she grew in a variety of ways, but one of my fondest food memories was of cutting a beautiful ripe juicy tomato in half, adding a sprinkle of salt and eating it like an apple. As I grew up, my presentation techniques advanced to slicing beautiful tomatoes alongside fresh mozzarella, adding a drizzle of sweet balsamic vinegar and a sprinkle of freshly chopped basil leaves.
As my husband and I realized that our backyard garden had the perfect sun exposure to grow tomatoes, we kept adding more tomato plants each year. It wasn’t long before I was asking myself “what will we do with all these tomatoes?” So, about 5 years ago, I bought the Ball “bible” of canning and started to “put up” tomatoes.
Although at first the process seemed intimidating, today canning has become a simple way to extend our enjoyment of summer produce throughout the year.
The photos at right, along with the commentary, will make your first attempt quite simple, but if you’re serious about canning, buy the Ball book, a wide mouthed funnel, a jar handler and a wand to help you “fish” those jar covers out of the very hot water. Also, find a friend or family member who loves tomatoes and cooking with them. The experience is much more fun when shared.
